In the Words of Rachael Ray, Yumm-Oh!

If you ever buy those rotisserie chickens from those grocery store, or if you just like a nice moist-roast chicken, then I insist that you make this.  And seriously, bacon & paprika? Totally a breakthrough.  Plus, it smells amazing when it's cooking.  Then only changes I made to the recipe, is I used fresh thyme and instead of carrots, I added onions.

I was talking to baby sister yesterday and she was telling me about the Tabbouleh Salad she had made.  My mouth was totally filling up with water as she talked, so being the huge copy-cat that I am.....I made one too.  I somewhat redeemed my self by making a Southwest Quinoa Salad.  I found a few random recipes on foodgawker and then made my own version.  Fresh & colorful.....like summer in a bowl.


Quinoa
Corn
Cherry Tomatoes
Edamame Beans
Red Pepper
Sliced Avocado on top

Dressing:
Equal Parts of Olive Oil & Red Wine Vinegar
Dash of Chili Powder
Dash of Cumin
Salt & Pepper
